The title says it all. Whipped up an easy chicken & potato salad for mom’s birthday yesterday.
Scrub potatoes free of dirt. Boil in salted water. Cut into bite sized pieces when cooled. There’s no need to cut the other veggies (I like the different texture that goes on in the salad), I added carrots, celery, red pepper, & spring onions.
Season & cook chicken; I used chicken thighs. One thing though, make sure you chop the chicken into bite sized pieces ..I don’t know what I was doing but I managed to cut it a bit too small -_-
As for the dressing, Mix mayonnaise, mustard, paprika, season with salt & pepper, and a few grates of lemon zest. Dress salad.
Chill & serve.
